Owl Pumpkin Pies
makes 6 small pies
  • For the pie dough:
  • 3¾ cups flour
  • 1½ cup unsalted butter, cold, in small pieces
  • Dash of salt
  • 10½ tbsp ice cold water
  • For the filling:
  • 1 50oz can of Pumpkin Pie Mix
  • ⅔ cup evaporated milk
  • 2 eggs
  1. Make the dough: Place 1¼ cup of flour, a dash of salt and ½ cup of cold butter cut in pieces in the bowl of a food processor. Pulse until the butter is in tiny pieces. With the motor on, slowly add 3½ tbsp of ice cold water and mix until the dough forms a ball (about 6 seconds). Cover dough in plastic wrap and refrigerate. Repeat twice to get a total of 3 dough disks. Once the dough is cold, roll it out to ⅛" thick and place into pie molds.
  2. Make the pie filling: In a large bowl, mix 50oz of pumpkin pie mix with 2 eggs and ⅔ cup of evaporated milk. Pour into pie shells and bake at 350 degrees F for 50 minutes.
  3. Make the lattice: Roll out the last dough disk to ⅛" thickness and follow decoration instructions below. Bake lattice at 350 degrees F for 20 minutes.
  4. Assemble before serving
