Christmas Tree Linzer Cookies
makes 12 cookies
  • 1½ stick of butter, at room temperature
  • 1 cup sugar
  • 1 egg
  • 1 tbsp vanilla extract
  • 2½ cups flour
  • 1 cup jam, strawberry or raspberry
  1. In the bowl of an electric mixer fitted with the flat beater, mix together butter and sugar until light and fluffy. Add the egg and vanilla extract and mix until combined. Add flour and mix on low speed until the dough comes together.
  2. Place the dough between 2 pieces of plastic wrap and roll to ⅛" thick. Refrigerate for 30 minutes. In the meantime, preheat your oven to 350°F.
  3. Using a tree cookie cutter, shape your cookies and place them on a baking sheet. Using a straw, punch out holes in half of the cookies to look like ornaments.
  4. Bake for 10 minutes until the edges start to turn golden. Let cool completely.
  5. Spread an even layer of jam on each solid cookie and sandwich with one cookie with holes in it.
