Striped Meringue Cookies
Makes 80 mini meringue cookies
  • 4 egg whites, at room temperature
  • 1 cup sugar
  • ½ tsp Cream of Tartar
  • 1 tsp oil-free flavoring
  1. Preheat your oven to 225 degrees F.
  2. Place all 4 egg whites in the bowl of an electric mixer fitted with the whisk attachment. Mix on slow speed for a minute.
  3. Once the eggs are frothy, start adding the sugar little by little. Once all the sugar has been added, crank up to high speed and mix until firm peaks form. Spoon mixture into pastry bag and pipe meringues out onto a parchment-lined baking sheet.
  4. Bake for 50 minutes then turn off the oven and leave the meringues in for another hour.
