Rustic Blackberry Galettes
Serves: makes 12 galettes
  • 4 cups all-purpose flour
  • 1 tsp. salt
  • 3 tsp. sugar
  • 24 tbs. (3 sticks) plus 3 Tbs. unsalted butter, cut into cubes
  • ¾ cup ice water
  • 5 cups blackberries
  • 2 tbs. fresh lemon juice
  • ¼ cup sugar
  • 3 tbs. flour
  • 1 egg
  • ¼ cup raw sugar
  1. In the bowl of a food processor, pulse together flour, salt and sugar together until combined. Add butter cubes and pulse about 10 times or until the pieces of butter are about the size of peas. Start drizzling the ice water through the feed tube and turn on the food processor until the dough comes together, about 7 seconds. Divide the dough in 2 balls, wrap in plastic, flatten into disks and place at the bottom of the fridge until ready to use.
  2. When ready, preheat the oven to 375 degrees F. Mix berries, lemon juice, sugar and flour in a large bowl. Set aside. Flour your work surface. Unwrap one disk of dough and cut it into 8 slices. Roll your first piece into a disk and place onto a baking sheet. Spoon about ⅓ of berry mixture in the center and fold the edges of the dough back towards the center. Brush with an egg wash and sprinkle raw sugar all over. Bake for 10 minutes or until the dough starts to turn golden.
